Rustic Pork and Chicken Stew

Rustic?!?! You bet. The scent of this stew will quickly surround you, reminding you of simpler times and instantly bring you to a place where you can literally hear the singing of the gondoliers ...... Well, maybe not THAT rustic, but delicious in its' own right.

2 tablespoon(s) oil

1/2 lb(s) boneless pork chops, trimmed and cut into bite-sized pieces

1/2 lb(s) chicken breast, cut into bite-sized pieces

1/4 lb(s) salami, thinly sliced and chopped

2 cup(s) chicken broth

1 small onion, peeled and chopped

1 large potato, peeled and diced

1 large, firm, tart apple

1/2 cup(s) cooked lima beans

2 teaspoon(s) garlic powder

1 teaspoon(s) celery salt

1/4 teaspoon(s) cumin

Salt and black pepper to taste

In a large saucepan, add oil over medium high heat.

When hot, add pork, chicken  and salami. Stir fry until chicken is browned, about 4 minutes. Add chicken broth, onion and potatoes, bring to a boil.

Reduce heat to low, cover and simmer for about 5-7 minutes, or until meat is done throughout and the potatoes are just tender. Meanwhile, peel, core and dice apple.

Add to stew with lima beans, garlic powder, celery salt and cumin. Salt and pepper to taste and continue simmering, uncovered, until apples are soft, stirring often.

Remove from heat to serve immediately.
